Hiding your guest list hides your guests' names (email addresses are hidden by default), RSVPs, and comments left at time of RSVP.

This is the "Who's Coming" tab that only the host can view with a hidden guest list. Only the host will be able to view the comments that guests made at the time of RSVP:
